The Normanno refuge pizzeria, founded in November 2003 by Maestro Pizzaiolo Raffaello Angileri, is located in Monreale near the "Abbiviratura" district. Set on a large panoramic terrace, it offers a spectacular view of Palermo.
It takes its origins back in 1978, when eleven-year-old Raphael learned the ancient art of pizza in the old family pizzeria "il Gattopardo", which stood in the district of Lenzitti.
In that place the little Raphael learned the procedures in the handmade dough and the secrets of cooking with wood. These proceedings were handed down from the grandparents to the parents of the same.
Even today the simplicity and genuineness of that dough, of the raw materials used and the tradition of wood-fired cooking remain peculiarities that distinguish the gastronomic activity of Rifugio Normanno.
